What paint is safe for interior of wood incubator?

I have an old GQF model 800 incubator. Works pretty well. Interior was painted silver long before we bought it - or maybe that is the way it was originally? I am considering repainting the interior. What paint is safe to use and how long does it need to dry/air out before I use the incubator? Perhaps I am better off leaving it as is? Thanks!
 
I'd use a marine polyurethane. Nontoxic and waterproof so it will handle humidity. It's what I coat all my plywood animal cages in. It isn't very showy though. You can get it in a few colors but it's not going to make your incubator look fancy.
 
why paint?? is there something wrong with the wood? just asking couse i don't know
 
I used spar urethane. 7 coats worth and could hold water if I was so inclined to do so with it. I did let it air out for a few months, but it was probably not necessary.

Paint is good to protect the wood and for easier clean up.
