What poultry or animals can I raise to sell directly to processor?

Hello, I am looking to start raising some animals to make some cash on the side this year. I was wondering what animals/poultry I could raise that I could easily sell. Preferably ones that I can sell directly to a processor.

You know, I am not certain what you can raise and sell to a commercial processor without being subject to USDA inspections. I know that there are exemptions that you may have for poultry you process on your farm that you sell directly from the farm as long as it doesn't exceed 1000 birds a year including what you raise and process for your family. I still think you have to register with the state you live in, but I guess the best thing to do is check with the state in which you live.

A lot will depend upon the processors in your area and the cultural diversity of the area. Here in the NE for example there is a high demand for lamb and goat meat - especially in the spring. Turkeys around Thanksgiving and geese around Christmas also sell well.
 
Thanks! Does anyone know any processors within 2 or 3 hours of the Quad Cities in Iowa/Illinois that would buy any animals directly from me?
