Danger! Danger! Some types of animals will display a displeasing color as a warning to other animals. Similar defense mechanisms would be odor— skunk, excreting poison through the skin— poison dart frog, etc, etc. 🤓🧐
That was the the most excepted theory up until recently (a decade or so I believe)

The current belief is that it is mostly used as a defense mechanism. A study found that the tongue reflects large amounts of UV light. While we can’t see it, birds are able to. So when they stick out their tongue, it causes a “flash” scaring or confusing the predator causing them to leave or give them a second to try and make an escape. There are a few other possible reasons as to why they have it but this is believed to be the main one.
