Danger! Danger! Some types of animals will display a displeasing color as a warning to other animals. Similar defense mechanisms would be odor— skunk, excreting poison through the skin— poison dart frog, etc, etc.

That was the the most excepted theory up until recently (a decade or so I believe)

The current belief is that it is mostly used as a defense mechanism. A study found that the tongue reflects large amounts of UV light. While we can’t see it, birds are able to. So when they stick out their tongue, it causes a “flash” scaring or confusing the predator causing them to leave or give them a second to try and make an escape. There are a few other possible reasons as to why they have it but this is believed to be the main one.
