What to do with all these eggs?!?!?!?!

Hi , I am also in Oklahoma, just east of OKC........ I give away eggs like you do and still have some left. I do cook them up , egg shell and all for my chickens......but also have sold some on Craigslist...........it is a nifty site...... go to craigslist.com and it is pretty self explainitory and lists by city you are in........I got 2.00 a dozen for my brown eggs and they pick them up.pretty easy... Just a suggestion....there is also okcalmostfreestuff.......in yahoo groups.....check them out and good luck........
 
The recipe is very easy this lady was so nice to give it to me... she said save and freeze your pickle juice from your favorite pickles. Wash and save those jars. Then when you have about a gallon. Thaw the juice and put it on to cook till it is almost boiling. Let it set there for a little while and then get your old pickle jars sterilize them and boil enough eggs to fill them all then when they are full *leaving an inch at the top for juice*, fill the jars to near the top. Put on the clean lids till very tight and let cool on the cabinet till room temprature and stick in the refrigerator for 2 weeks. Be sure to mark the jars so you know when two weeks is up.

She said she couldn't keep them in stock just for her family. I would imaging if you were going to sell these you would have to use new jars. She said you could if you wanted to add some fresh dill for decoration. But I don't know if that would make it too dilly lol...

oh yeah... she said if the juice was cloudy to strain it through cheeze cloth till clear. It should still be green lol...

Some items require a license to sell. I think a lot of baked goods do require a license. I am not sure where you would find this out actually. I know I am not much help but I heard from someone who works in a farmers market that eggs don't require a license but things made with them do. This may be different from state to state. (or county to county for that matter)

ok, but should I peel them before I bottle them. I know that's the stupidest question anyone has ever asked but I've never eaten a pickled egg.

How bout a fabulous quiche or I have this recipe for a flourless chocolate cake that is just eggs, butter and semisweet chocolate. I think it takes about a dozen eggs and it's really good but the recipe is 3 pages long and you need all of the instructions. It's not hard but complicated... like how stiff the eggs have to be beaten to etc. You also have to bake it in a springform pan inside another pan full of water but it's worth the read.

My quiche is easy as pie! I'll see if I can get it posted.

My husband says eat more potato salad. You can use as many eggs in that as potatos or even more.

egg salad sandwhiches. He said if you make the potato salad invite him over and he'll take half dozen egg omlet for breakfast
 
Yes peel the eggs and it takes about two weeks she said. But she can't keep the eggs on hand. The family can empty a jar of pickled eggs in a couple of days. I don't know how you would to homemade-do-it-your-ownself pickle juice lol. But I am sure there is a way.

Is that safe to feed your chickens their own eggs back to them? I feel like I've read on here that's not a good idea? But that could be my imagination. I have the same problem I'm getting on average 3 dozen a day.
 
If you donate them to a local food bank you can use it as a tax credit. I would say 3.00 a dozen if you decide to donate them.
