what to do with too much squash

We have several yellow squash plants. Seems like we pick some every day. I'm getting a little tired of boiling them, lol. I did fry some up, My son and I liked them, his sisters... not so much. We had it, along with other food, for lunch one day and so when my DH came home and I told him what we had for lunch he felt left out, lol.

I would like to tyr my hand at grilling some kabobs sometime. I'm also waiting for my mom to find a recipe for me and send it to me. I think it was something like Zucchini Rice Bake... or something like that. I figured I could make it with yellow squash though and it taste just as good. I haven't seen any casseroles that even compare to it though. (I'll share that recipe once I get it)

All the ideas on here look delicious!

I love squash & zucchini... we grow both & they plants are doin great this year, lol

One of my favorite dinners is slices strips of squash, zucchini, onions, peppers, sometimes sliced potatoes, sometimes I'll through some green beans in too, fresh basil, salt, pepper, garlic powder mixed all together, then saute in a fryin pan with alittle oil... ooo so good. I could eat this with a slice of cornbread and I'm a happy girl

I like to put zucchini slices in an egg wash, then roll in Japanese style bread crumbs and fry in olive oil until crisp--so good! Also, zucchini bread with crushed pineapple in the recipe--yummy.
