What to do with turkey eggs?

I have a male/female pair of Bourbon Reds but do not have the space for, nor interest in, raising poults this year. Hazel hasn’t laid any eggs yet, but when she does, what should I do with them? Are fertilized eggs edible?

Whether or not eggs are fertile has no effect on their edibility.

Turkey eggs are good for baked goods and make excellent custards. You can cook them whichever way you prefer.

I do recommend that once she starts laying, place a fake egg or two in her chosen nest. Constantly removing the eggs and leaving an empty nest will cause the hen to seek a better (more hidden) nesting site.
