What type of animal eats only the neck and back of poultry?

‼️Warning: graphic description and photo.‼️Trying to figure out what got one of my Swedish ducks. I found the carcass in a corner of the barn directly below a hole in the roof, surrounded by one pile of feathers. The attack was likely in the afternoon, and there has been a pair of red tail hawks hanging around lately. I see them everytime I go outside. I’m thinking one came through the roof and started eating where it made the kill. But here’s the odd thing- despite attacking from above, hawks typically go for the breast first, so I’ve been reading. The only parts eaten were the back of the neck and everything above the rib cage- the ribs were broken, and some of the meat around the breast was eaten as well as organs, but only from above, through the rib cage. This was the top front portion of the body only. Think upper back. There were some stringy ribbony bits, possibly indicating a hawk, and either talon or bite punctures around the neck and head.
My fear is that this might a bobcat problem because of the organs missing snd bite marks around the neck. Not to mention there are bobcats in this specific area that steal chickens.
I covered the fence with netting, and covered the hole in the roof so hawks can’t get in now, but a bobcat or raccoon definitely could find a way in during the day when the birds are not locked up.
Any thoughts or similar stories that may solve the mystery?
