I just peel them and cut them into cubes. I use aluminum Foil to make an enclosed packet, pats of butter and salt and pepper. Roast 425 until tender with a fork. Generally around 1/2 hour or so. It's the only way I will eat them. Boiling ruins them. I've converted my husband. He used to hate them too, but loves them now.Share your roasted beets recipe?
