Whatcha Making for Supper?

I just peel them and cut them into cubes. I use aluminum Foil to make an enclosed packet, pats of butter and salt and pepper. Roast 425 until tender with a fork. Generally around 1/2 hour or so. It's the only way I will eat them. Boiling ruins them. I've converted my husband. He used to hate them too, but loves them now.
Thanks much, I’m trying this. I love beets but really want my hubs to try them again and he’s so picky.
 
I have to ask what is birria?
It’s a Mexican style of cooking meat, traditionally served with the braising liquid. We’re using the liquid to dip. Kind of like stew made with a roast and without vegetable chunks
