Whatcha Making for Supper?

This week I cut and freeze dried eggplant, zucchini and bell peppers. Tonight I will reconstitute them in my home canned tomatoes, add some herbs and make a ratatouille. So anxious to see how things rehydrate. Will it really be like the day you freeze dried it?
 
I'm happy to say the ratatouille turned out great! The onions and garlic were fresh, but all the other veggies were freeze dried, and with my home canned tomatoes. Nice to know that in a pinch we can pull things out of storage and make a meal.

Going on week two of being sick and unable to shop. We will be getting creative this week with what's in the freezer.
