Whatcha Making for Supper?

Yesterday someone gave me some frozen Lake Erie perch and walleye he had caught. They sat in the fridge for a day and a half, but are nowhere close to being thawed, and I wasn't sure I wanted them today anyway, so no water bath and they shall remain in the fridge for a day or two.

But I did pick up a nice rolled pork roast at the local grocer today. No gumption for a long cooked meal today...

So, my latest favorite quick meal is on the menu tonight. "Pasta al Limone", or lemon pasta as I call it :)
I've made it so much the past six months, since seeing it on youtube, that I even bought a lemon squeezer a couple weeks ago.

I had cucumber salads growing up. Two ways.
One with watered down vinegar and onions, and mom always had ice cubes in it. And one with onions and sour cream and mayo. The second was my favorite, but I still make them both from time to time when summer hits. I can eat a big bowl of the sour cream one. Sometimes I'll finish off the leftovers for a night time snack :thumbsup
