Any updates

Made the pork chops last night.

I did not get enough seasoning (I did not have any cajun seasoning, so I substituted dried jalapenos and chipoltrie seasoning).

I feel like I could have used more seasoning.

Made the roux, which was very thick.

Do use anything in the roux to thin it down?

We liked the taste and felt it was too bland which is my fault.

I have enough leftover for another meal, so I'll be adding more seasoning.

I only used 2 pork chops.

Will let you know how it turns out.

Little milk or 1/2 and 1/2.

Sounds like you put too much flour in the oil. It should be about the consistency of pancake batter maybe a touch thinner by the time it's chocolate brown. Also get you some of this from Amazon

In the recipe it asked for close to equal parts of flour.

I had had a container of Tony Chakhere's Seasoning, but when I went to get it there was none so I made some substitutions.

When I go to the grocery I will get some more seasoning.

The was good last night it just didn't have enough seasoning which is easy to fix.
