Plan to cook up some 'taco' seasoned ground beef, mix with a can of refried pintos for taco/burrito filling. I use WW tortillas and wrap like a burrito or fold like a softshell taco....
... and add cheddar, tomatoes, salsa, and lettuce if I have some.

Got lazy and it got late and I got hungry so settled for fried eggs on sweet toast again.

We had mashed potatoes, creamed corn, and peas, sauteed shiitake mushrooms, and onions, and broiled delicata squash. Husband also had some salmon.
