Whatcha Making for Supper?

Tonight I made a cold tuna mac salad. It was 70°F today, we didn't want hot food for a change. Nice wx didn't last long, t-storm alerts all around and flood warnings for tomorrow. Ah, Spring, you're so bipolar!
 
It's not the nicest looking dish, but I'm kind of proud of myself for making healthier choices today. Breaded pollock, veggies, 1/3 cup rice, and 1/2 cup low sodium veggie juice. I'd like to make the swap from breaded fish to non-breaded fish, but I need to learn how to cook properly... 😅

Yummy! The trick to fish is to cook on low to medium heat just until the flakes separate easily with a fork. The thinner your filets the lower your temp should be. Sometimes I’ll do it on low with a lid also. You can also try baking it which is even easier.
