Whatcha Making for Supper?

Baked potatoes, loaded (no bacon), and some baked or grilled onion flowers. Uhh, baked. It's raining out there, the outer bands of TS Beryl visiting us.
And mushrooms, sauteed in plant-based butter and olive oil, seasoned with aminos. :drool
 
I picked a bunch of leaf lettuce, some kale and collards and made a big salad. Added a few almonds and walnuts and extra virgin olive oil.
Do you ever toast your walnuts, either in the oven or in a dry skillet? Really brings out their sweetness.
 
How long the heat setting ? cast iron?
Any skillet will do, I used my heavy stainless (waterless), just a dry pan on the stove top tonight. No point heating up the oven really. Oh, medium heat I guess. Stir occasionally with a wooden spoon or such. Just keep an eye on it, it only takes a few minutes. Your nose will tell you, when they start to smell the least bit toasty I take them off the heat and let them cool in the pan.
