Before I was 14 (at which age we moved out of this neighborhood), there was a pizzaria like this where I grew up. I used to pass it on my way to the library. I remember stopping to stare through the big plate glass window in front and watch the guy toss and spin the big flat discs of dough that would become a pizza. It was fascinating. I've got a trick I came up with a few weeks ago. The last time I made tacos.
Instead of building the taco ingredient by ingredient and having several piles of everything, I mix the lettuce, tomato (in this case Ro-Tel), onion, cheese and taco sauce in a bowl. Then just spoon it in on top of the meat.
Then, depending on how much leftovers of each I have, it will eventually become taco salad.

Me and dough do not get along. Near as I can tell, after several failed attempts, is I'm too rough on the dough and create too much gluten.

We are having Icelandic cod tonight. Have not decided how I will fix it yet.
