Whatcha Making for Supper?

I'm going to try something a little different tonight. At least that is the plan, now.

Yesterday I bought a couple "steak size" chuck steaks. I've grilled a chuck roast before, reverse sear method, like a wave of youtubers were doing. And it wasn't bad at all. Like a beefy steak. You slice it thin when plating. So when I saw the larger, 1" thick steaks sitting there, that was my plan.

BUT... last night I decided to make stew with one. I'm calling it skillet stew. I'm going to leave the steak whole, but flour it and sear it like you do stew meat. Then I'll add the veggies and broth and braise it as if cooking stew in a pot.

I'm hoping for a stew for one kind of thing.

I've made stew with chuck. It was delicious. Good plan.

Well, for all you leftovers lovers, you'll be happy to know that we plan to have leftovers tonight and tomorrow night. I didn't get the Italian beef nor the shrimp etouffee into the freezer, so we will have to have those. I don't know which for tonight. Probably the beef. It's older.

DH always blesses the food, but he'll say "bless the hands that prepared this meal, even though it wasn't actually prepared tonight..." Lol.

I've always used chuck roast for stew meat. I know no other way :)
But cutting a 3lb roast into bite size pieces, flouring and browning in batches, is time consuming. And boring ;)

This is going to be like a Swiss steak, but done like stew.

And I'd go with the seafood first ;)
Maybe over noodles tonight instead of rice.
