I was thinking lemon pasta. I haven't had that in a while.
But then I remembered I bought more of those red Argentine shrimp. So now I'm leaning towards shrimp scampi.
I think what throws me off beets for the most part, is I don't know how to tell if they are good or bad. Same with turnips. Or sweet potatoes.
I don't like trusting my usual shopping hole. They sell too many other off veggies like slimy shrooms or moldy green beans as business as usual.
Anyway...
I think I'll add the zest next time. Needed just a touch more lemon.
