That looks delicious.
Like smothered chicken, but not all the way up so you retain the crispy skin.

I might have to make mashed potatoes or rice for underneath it
Probably rice, unless I leave out the potatoes.

I picked up a bag of poblanos this morning in anticipation of making that taco type recipe @ValerieJ posted, so since I'll have extra, I'm going to roast one and add it in with the taco meat.

It's a new staple on taco day here. DH loves it. I don't always want it, but I make it. Easy enough to make a small portion.
