Crossing the Road
I have another experiment going, my second attempt at a zucchini boat. This time I opened the squash from one side so the boat's deeper, and there's a lid I can put on if I want. It's in the oven now without the lid on, but I might put it on later.
Seasoned with salt, pepper and oregano.
Mozzarella cheese and jalapenos.
Roma tomatoes.
More salt and pepper, and olive oil.
Red onions.
Mo cheez, without the lid.
With the lid. I'll probably cook the lid on the side and put it on top when it's all done. It's an experiment so it might be a big fail. I have the oven set at 425.

It was close to a success. The only thing I'd change is to add enough bread crumb to the filling to soak up all the veggies juice and olive oil. It was tasty nonetheless. I baked it for 55 minutes, and the zucchini was cooked, but still had some firmness.
Looks good to me. Can't wait to see it finished.

Hmmm well steak bites, fries and a veggie.
