Tonight, I cooked pulled pork and smoked sausage jambalaya, Yukon gold potatoes, and creamed corn.
Chocolate cake for dessert

Hubby had leftovers.
I had an English Muffin.

I have another experiment going, my second attempt at a zucchini boat. This time I opened the squash from one side so the boat's deeper, and there's a lid I can put on if I want. It's in the oven now without the lid on, but I might put it on later.



Seasoned with salt, pepper and oregano.


Mozzarella cheese and jalapenos.


Roma tomatoes.


More salt and pepper, and olive oil.


Red onions.


Mo cheez, without the lid.


With the lid. I'll probably cook the lid on the side and put it on top when it's all done. It's an experiment so it might be a big fail. I have the oven set at 425.
