There was a WW2 veteran who was a greeter at our local grocery store. He told the Princess about this several years ago. We also coat the roast with butter/herbs/seasoning. Oh yes, I did the butter, herbs and seasoning too. And btw, is there a difference between Prime Rib and Standing Rib? I've been researching that and they appear to be the same cut of beef. And Rib Roast is the Prme Rib without the bones, as near as I can tell. I have never seen a cut called Standing Rib in any of our stores, but the other two are available and I've bought both. Ooh ooh! I just saw a tutorial on this today! A standing rib roast means with the bones. I don’t think the markets call them by this name. It may be an old school thing. Prime is a premium grade of beef, any cut. So a rib roast can come with or without bones, and be any grade: Prime that had the most fat, Choice which is next fatty and Select which is the leanest but less flavor. Actually I did learn that Prime Rib has nothing to do with the grade at all. If you want prime Prime Rib, it has to say it, or you have to ask the butcher. I'm familiar with the difference between prime and choice as I always buy prime beef, but not with the prime rib.
