Whatcha Making for Supper?

Had breakfast for dinner. "Jelly donut" french toast, which is just french toast with powdered sugar and raspberry jam.

Because of the impending storm we went out for our 'anniversary dinner' tonight.
Happy Anniversary! I always assumed January weddings were rare, but I've seen more than one lately (myself included).

I'm sorry! I know you're trying to be mindful of sugar, then here I am with my sugared sugar with sugar syrup dinner. I am not a good example of how to eat at this stage in my life. :oops:

It’s okay!!!!!!!!!! Yesterday and today were horrible for me for sugar anyway LOL

But soggy pastry crust. Small wonder with all the liquid tomatoes have. Unless I missed a step.

A couple of tricks from my Italian family:
  • Salt your tomatoes a little and let them "sweat" a bit. My Uncle would put his on a linen towel, but paper towels or a colander can work, too.
  • Before adding your toppings, bake your crust just long enough for the crust to harden off a bit (a few minutes - you don't want it to bake through,) then baste the top with olive oil before adding your toppings.

I've had a pot of soup on all day - potato/chicken/corn - it turned out beautifully. We had it with croutons. They were supposed to be homemade bread ... but ...
*NOTE TO SELF* When your oven goes on the fritz midway through the baking process, do NOT finish off your bread in the microwave, even if it's in a silicone baking pan. By the time the outside looks "done," the middle is a rock. We got a few nice slices from either end, but the rest would break teeth. It was great for soaking up all that creamy broth, but Zheesh - what a mess!
