A large meat spot. A bit of reproductive tract tissue that sloughed off and got caught up in one of the eggs.

Agreed. Meat spot. Cut it out of the omelet and eat the rest. Try to watch for them now that you've had one and find out who they are coming from. Sometimes one hen will throw them constantly. You can candle for the big ones if you sell eggs. Don't try to hatch an egg with one.
