What's the most expensive breeds of poultry that people want?

Its not so much the breed its the breeders reputation that regulates the price of the chickens. Sorry but that only comes with time. If you think you're gonna flip chickens it doesn't work that way

I'd say the most pricey birds aren't even a specific breed...for me to pay more than the bottom $ they would have to be ones that have good breeding lines, well taken care of and show results--A big bonus!

Anyone who is going to buy for backyard flock have their own preferences, likes/dislikes and experience with different types of birds.

Yeah, this is also a big part. You have to breed good, healthy birds, and you have to have a good reputation. Otherwise, no one is going to pay you hundreds of dollars for chickens.
 
Study up on tulip mania, and get a crash course in economics and marketing. The breed to make money on right now, is the breed that you have, that not many other people have, that people will decide they want in the next couple of years. You could keep a few breeders of all the breeds, of course a lot of those would be unpopular and you would go in the hole feeding them. Or you could just keep one breed and hope that it comes into vogue every twenty years or so. You could also try the speculative import market. It's a pyramid scheme destined for eventual failure. You import at a very high cost, hand off that cost selling breeding stock to the next tier of breeders, then they hand off to the next tier. The breeding quality, and price, suffers art each level. Eventually, everybody that wanted that bird so desperately is trying to sell off as many as they can to recoup initial purchase price. And they eat money the whole time.
