whats your farovite everyday cookie recipe?

A friend of mine gave me this recipe several years ago....she called them ESP cookies because that is all the ingredients (except the vanilla). One thing I found with them is mix, mix, mix (I use my hands). Otherwise, they tend to turn out a bit grainy.......if they are extremely well mixed they are amazingly good!!!
 
Try crushing up toffee into pieces and mixing that in with the dough. Amazing!!
I mad a batch of these for a guy at my DH's work and he paid me $10 for them!!
 
:DThis is what I make when we want cookies and I want easy. Everybody likes these--never met anyone who didn't. I have been asked many times to share the recipe. I got it originally from Taste of Home magazine. These are bar cookies which makes them even quicker and easier.

PEANUT BUTTER BARS

1/2 cup butter or margarine, softened
1/2 cup creamy peanut butter
1/2 cup sugar
1/2 cup brown sugar
1 egg
1 tsp vanilla
1 cup flour
1/2 cup oatmeal
1 tsp baking soda
1/4 tsp salt
1 cup choc. chips

In mixing bowl, cream butters and sugars. Add egg and vanilla. Mix well. Add flour, oats, baking soda and salt. Mix well. Spread into a greased 13x9 baking pan. Sprinkle with choc. chips. Bake at 350 for 20-25 minutes or til lightly browned. Cool 10 minutes. Combine icing ingredients, drizzle over bars.

Icing:
1/2 cup powdered sugar
2 Tbsp. creamy peanut butter
2 Tbsp. milk

Stir together in small bowl. Adjust milk/sugar to get right consistancy. You want it thin enough to pour in a nice stream, but not so thin it runs all over the bars.

Cool, and enjoy. YUM!

That's what we are doing here right now! Here's my family's favorite recipe. It makes a bunch, but you can always freeze them to have fresh cookies later. I've done that for my kids lunch boxes when they went to public school. It worked great!

Chocolate Chip Cookies

1 cup butter
1 cup crisco
1 1/2 cups white sugar
1 1/2 cups brown sugar
4 eggs
2 tsp. vanilla
2 tsp. baking soda
dash of salt
5 cups flour
2 bags of choco. chips or m&m's

-Mix together butter and crisco. Add eggs and vanilla. Mix well. Add sugars and mix until fluffy. Mix in baking soda and salt. Slowly add the flour. Mix chips in slowly with mixer or by hand.

Bake on 350* for 10-15 minutes, until edges of cookies start to brown. Makes about 7 dozen.
