WHEN ARE TURKEYS READY TO BUTCHER

I have four turkeys I purchased at the elevator in April, two BB and twoBW. They are about three months old and pretty big! Does age have anything to do with the toughness? I thought I read somewhere that they should be about 20 weeks old before butchering. Any help is greatly appreciated:)
 
I go by size. How big a bird are you looking for, how much left overs do you want. Don't know if age makes a difference with toughness like chickens. But I've never had one get older than 4 months.
