When are Turkeys ready?

So I ordered 10 turkey chicks (they gave me 12 and all have survived) from the hatchery during lockdown. I thought it would be a fun project for Christmas. Of course it was a bit early and they are currently 12 weeks And should be at 4kg oven ready so will be huge For Christmas.
My question is I just started them on finisher as advised by the feed ( growers till 12weeks then finisher after 12+ weeks) how soon till I can start Enjoying the fruits of my labour? And any tips on getting them oven ready (I’ve heard I’ll need tweezers for the little feathers)

They look like a heritage breed, so you'll probably need to grow them out for six months for birds on the larger side (4ish kilos)- if that's what you're looking for.

Just curious. Are they in a basement?
 
They are Bronze “Plumpy” Turkeys from the hatchery please see attached for weights at age. Ha no basement they were in my barn when I took the picture.
Any tips on harvesting or just Old school how Grandma use to it?
