when do I switch feeds from chick starter/grower to layer

You actually never have to, as long as there's supplementation oyster shell.
20 weeks is a good age, most birds start between 20-26 weeks.
Try to find a higher protein layer if you can, 18% or more is good. Standard 16% isn't high enough for them
 
when theyre grown large enough to integrate and/or theyre out of the box or special pen .. imo the idea is get them grown as fast as possible to where theyre not needing special care and chick starter grows them the fastest .. just dont make a drastic change like straight to pellets ..
