we have nest boxes for them once they get older and start laying but where do they sleep? just on the floor of the coop or do we need enough next boxes for all of them?

Don’t count on them using nest boxes. They may or may not intermittently use them to sleep in. Given the choice they’ll usually seek some type of cover and substrate to dig into a bit and make a little softball sized divot for the evening.

When in my grow out cages most preferred the sand box. The rest would seemingly pick a random spot. In the aviary they’re either under the grasses or nestled into the wood chips.

they would sleep in their outside yard? okay. what about winter? will they just sleep in their coop in the straw?

They seem to prefer sleeping outside. During the winter as long as they're dry and have shelter, they can handle below freezing temperatures quite well. That's another reason to make sure they have good hiding places. Their body heat will warm up a small place quite nicely.
