It's a long read, but basically the u in words like colour and favourite originated because UK English is derived from French (being itself a derivative of Latin)

When the English migrants became American they dropped the u and made other changes. One version says this was to save space and therefore money in printing. The other version says it was done as a form of anti-british protest.
