Which Chickens to get for new flock?

My leghorns lay extra large, white eggs. Every. Single. Day. It's amazing! But, they were bullies to the others for a long time (first 4-5 months together), but now things have settled down. They seem to be right at home in the summer Texas heat. The easter eggers also did well and are the best foragers of the bunch. The other birds are NH Red and Barred Rock.

Our Australorp is calm but does not like being pet or held. She can be noisy as heck as well, as in doesn't shut up all day long. She takes occasional breaks. She just made a year and after her laying break her eggs got MUCH BIGGER. She's gone from med-large to large-xl. Also, she has the softest feathers of all my girls. Which makes me sad because she doesn't like me picking her up and it's so hard to resist that soft fluffiness.

Our NHR will be pet but not held and can be a bit noisy. She's friendlier than I thought she would be and is extremely curious. Our NHR is still a pullet so, I don't know about laying breaks for her.

They are both dependable layers and do well in the heat (I'm in Hawai'i). However our Austra does go broody.
