Alan, the 2 largest speces would be mountain quail and butler bob whites. Now if you want to produce meat in an efficient manner with minimal cost in time or money then stick with any of the jumbo coturnix speces. Mountains are way too scarce in captivity and expensive to be a viable meat bird at this time, and Bobs (butler or other sub speces) are without a doubt the best tasting meat, but will triple(at least...) your time and money investment. As any coturnix speces reaches market weight by about 12 weeks of age, none of your bob speces are even close until 24-25 wks of age.... some require even more time. coturnix are easy keepers, bobs are not.

coturnix are hands down the best meat/eggs game birds for the time and money! In accounting terms, "The most cost/time effective". Unless you just want to raise crazy expensive, time/pen space hogging prissy game birds, because they are pretty, or you think they taste better. Then you should do that. There is nothing wrong with paying 2-3times the cost/time/pen space for exotic quail if that's what you want.
The largest bird doesn't matter, because an ostrich is the largest bird in the world, but you can raise a few times it's body weight in coturnix quail, for a fraction of the time/price/pen space.

for that infor. a friend of mine was looking at some of my pet tenn .reds quail and wanted to buy some for eatting but I told him that they seem to be to small and there sill to young , so I told him I check on here and if he wanted I would raise them and sell them to him if he wanted .
I do like mountain quail as for pets which I was thinking on getting me some this spring
