So I've looked at the very basics of IB peafowl genetics and have a basic understanding of genetics as a discipline.

Any idea why he has 1 white (feather) eye?

other theory is that it's a tiny white spot from pied?
 
He is split to WE meaning that he only has one WE gene and will have a random number of white eyes in different years. Around 25% of his offspring will carry WE as well but you will have to have a hen that is either split to or full WE to make more WE chicks. The WE gene is not always passed to the offspring.

thank you! I missed that split to WE showed. that's cool.

I'm planning to breed him this year to two seemingly wild type hens but who knows what they carry. fingers crossed for black shoulder but I'm not holding my breath.
 
Very interesting! I was going to ask you about this 'cause I have one that has less white eyes than last year.
we actually thought wed lost our WE but he just shed his feathers I guess or last year none came through, idk.
