Who cuts vegetables against their thumb?

Yes I cut against my thumb when peeling apples etc.
 
I met a woman in her thirties this week who didn't know what a paring knife was! I was to fine chop an onion and she brought me a cutting board

and this huge knife...guess one would use it if one were dicing things but I've never utilized it for such. I told her I could do this faster if I had a paring knife and she said she didn't know what that was and could I follow her to the kitchen and point one out.

The paring knives they had on hand I wouldn't have used except to spread butter...they were that dull and clubby. I like a nice, razor-sharp, slender-bladed paring knife....like a Rada brand or similar.
