Is in normal for her to not nest at all if she's going to lay a softie or fart egg? With 2 nesting boxes in the coop, I found two this morning right below their roosting bar.

Again, that is not uncommon with new layers. Even a hen will drop a softie off the roost. It takes quite an effort to get them out and they are likely working on it at night.
 
Welcome :welcome I’d give it a little more time and see. Sounds like you have feed and supplement available and the other gals are doing well. As far as egg eating - if I drop an egg or the rare soft shelled egg breaks open my chickens will sure gobble it up. They haven’t turned into egg eaters. I do keep a fake egg or 2 in each nest box though, maybe they figured hard shells are not going to break :lau
