Why are the yolks off center?

This isn’t a very critical issue, but now that it’s deviled egg season again, my curiosity has again been aroused. My yolks are always near the edge of the egg, sometimes barely covered by the white. Is there a way to get more centered yolks for better deviled eggs?

As the eggs are stored the yolk gradually sinks down. That's one reason when you are storing eggs for incubation or actually incubating eggs you need to regularly turn them, to keep the yolks centered.

I've seen chefs flip eggs in the carton a little while before they intend to boil them so the yolks hopefully sink closer to the middle.

Hmmmmm......
I store all my eggs fat end up, easier to grab out of the carton, but the boiled yolks are always in the fat end of the egg. I don't do deviled eggs, but it still kinda bugs me and makes wondered why/how.
