Why Cornish hens?

When looking to breed a good meat hybrid, I often see the recommendation to use Cornish hens. I was wondering what the reason was since they are not usually as good of layers as the other type recommended.

the idea is to either breed carefully and refresh the breeding flock sooner, or collect eggs whenever available.

The roosters are top heavy and have troubles breeding.
A show quality standard or bantam Cornish quite often are bred by AI.
CX broilers are even worse at breeding and don't breed true.
