Why do chickens shake?

Anytime I hold one of the flock members they feel like they're shaking. Is it caused by the cold weather?
 
They could just be nervous. I have some chickens who are used to being held and they are super relaxed and calm in my arms, no shaking. I have others that if I pick them up they shake/quiver and I think it’s because they are anxious about being held and not being in control.

Because they are scared. They are prey animals and don't like being restrained.
