Why do some Ameraucanas look one way and others not?

I see excellent pictures of Ameraucanas here many times. I am wondering why some of them have a very fluffy beard down most of their neck and some of them have long draping feathering with very little fluffiness.

Which bird is correct for the breed? Both?
 
They should have a nice beard. Occasionally they get picked by other birds, but you don't want to breed ameraucanas that genetically have no beard.
