Why does she walk like this?

All good suggestions. In addition to examining her legs/feet, I would check her crop as well.
I've never seen it with mine, but there's been a few people that have shared videos/descriptions similar and the hen was high stepping (like at the very end of your video) and the issue was the crop. Sour crop is something I would check. It may be harder for you to tell since you are not there very often. If there are other volunteers that are willing to help you monitor her crop that would be good.
The video wasn't perfect because another hen came at her, but she is usually high stepping like the end of the video all the time. Some other hens there have had an issue of impacted crop, and I've seen them eating feathers- I don't think they have a balanced feed. I've been trying to bring high protein treats like mealworms and scrambled egg, but I don't think it's working.

Well, you can only do so much if it's volunteer, but it wouldn't hurt to ask what type of feed is being fed.
I understand that they are on dirt, etc. but sometimes soil doesn't have enough suitable grit, so bringing some grit may be a good idea, just scatter it around?

I really don't think it's a very good feed but it's not my place to tell them that. I"ll bring some grit next time.
 
Unfortunately, this chicken was found to have Mareks. It has been over a month since I have been over there, and obviously will stop volunteering to protect my flock.
