Hearing the word broiler does have me thinking a bird intended for meat, but that is all I agree with in the post.
Dual purpose birds are very tasty. Not as economical, but VERY good. If processed and cooked properly.
I will always have extra roosters. I will butcher them. I do like my meat tender, so I slow cook the older birds.
Failure to rest the birds will result in tough chickens whether or not it is a broiler. I cooked my first CX the day I processed it. Had to feed it back to the chickens it was too tough.
