I don't need an immediate answer on this, as our first Coturnix eggs are about a week from hatching (fingers crossed!) but we have a VERY productive mulberry tree in our yard and I'm wondering if quail will eat mulberries? I know that chickens and ducks do, and that quail will probably eat the leaves, but will they / should they eat the berries?

Whenever you add food that isn't in crumble or pellet form you need to also add digestive grit. Commercialized feeds are water soluble so no grit is required, but once you deviate from that, birds can't digest the food properly without grit.
