Chocolate Coconut Macaroons


Preheat oven to 350

3 Cups shredded coconut (8 oz pkg.)
1 tsp. vanilla or almond extract (I like the almond)
1/8 tsp. salt

*mix above together*


Heat
2/3 Cup sweetened condensed milk

Add 2 tablespoons cocoa or 3/4 oz grated chocolate to the heated milk (I use 2 1/2 TBS)

Cool milk mixture and add to coconut to make a thick paste.

Fold in 1-2 stiffly beaten egg whites


Roll the paste into balls or drop it from a teaspoon onto a well-greased cookie sheet, about 2 inches apart. Bake 8-10 minutes, until edges are lightly browned. They may be rolled in sifted confectioners sugar. Add some cocoa to that too--chocolate is GOOD!

One piece of advice.... never buy chickens from someone who doesn't know the actual name of the breed.

Once I was eating maroons & drinking wine on the dock. I fell and busted my asterlorp.

I'm being punished anyhow..*somebody* got into the coconut so I'll have to think of something else to bake. I read coo coo maroons and went straight to macaroons..what is wrong with me?

It is funny what people post on cl though, I wonder how well they do with some of the birds and hatching eggs I see advertised? I'm a rotten speller, but If I'm going to put something up for sale I darn well use spell check and/or look stuff up. I wouldn't buy stock from somone who couldn't spell the type of birds they have.
