Forgive me, I lost my manners in my rush to the pantry.
Chocolate Coconut Macaroons
Preheat oven to 350
3 Cups shredded coconut (8 oz pkg.)
1 tsp. vanilla or almond extract (I like the almond)
1/8 tsp. salt
*mix above together*
Heat
2/3 Cup sweetened condensed milk
Add 2 tablespoons cocoa or 3/4 oz grated chocolate to the heated milk (I use 2 1/2 TBS)
Cool milk mixture and add to coconut to make a thick paste.
Fold in 1-2 stiffly beaten egg whites
Roll the paste into balls or drop it from a teaspoon onto a well-greased cookie sheet, about 2 inches apart. Bake 8-10 minutes, until edges are lightly browned. They may be rolled in sifted confectioners sugar. Add some cocoa to that too--chocolate is GOOD!
