I am overrun with hard-shell squash: butternut, carnvial & pumpkins
& I am running out of ideas for cooking them.

So far I have made:
*roasted butternut
*squash-filled enchiladas
*pumpkin curry

The freezer is full of cut-up pumpkin, the others are sitting on my kitchen table & the vines still have some fruit on them!

I have a recipe for pumpkin soup but after that I could use some suggestions.
Does anyone have a simple pie-filling recipe?
I don't necessarily like pumpkin pie, but the custard filling is good on its own.
Ooh! Pumpkin flan : 9 < anyone?

I like butternut squash filling in my ravioli! Mmmm.... I make my own! (I bet pumpkin would work too) Think savory.... with pepper and nutmeg. Yummmmm

I do dry cherry tomatoes in the oven, but how long would pumpkin take?

vfem: Mmmmm ravioli sounds like a great idea for all of the squashes!
A friend & I made pasta last year using delicata squash & a bit of nutmeg in the dough - came out very tasty : 9
I'm thinking sage for the ravioli (I cheat & use wonton wrappers for ravs.) With browned butter....

What?
No pie-filling/custard recipes?
I may have to experiment with the one from the Libby's can....
