I’d like to provide some protection from the wind/rain this winter. Would you cover the run ground to roof with plastic tarps or just like 4 feet high? Something else?

Just the bottom 4 feet or so should do. Chickens already have a cozy down coat to keep them warm, mostly you just want to block the wind so that fluff can be more effective. Covering ground to roof is likely to cause ventilation issues.

Several ways to do this, just 3 sides or all 4 but leave a couple feet at tops of walls for ventilation.

Where in this world are you located?
Climate, and time of year, is almost always a factor.
Please add your general geographical location to your profile.
It's easy to do, and then it's always there!
