wiring a thermostat question

The fan should be run on its design voltage, 12 Volts, or nearly so. It will then run at its designed speed. You can slow it down or speed it it up by lowering or raising the voltage, but there are limits there, depending upon the design of the motor and the driven fan, there may be problems with overheating. The amperage rating is only the capacity of the power supply, it will not speed up or slow down the motor. A 12 volt supply with a 1 amp capacity should be sufficient, larger doesn't hurt anything, but too small will not work or may not be safe.​
 
Either will work the same for your application. The 2 amp one is a larger power supply (could run larger items, or multiple items).

They both look to be switch-mode power supplies (all electronic) vs an iron transformer. I prefer the the ones with a transformer inside as they are pretty bulletproof, but the voltage varies with the load (doesn't really matter for a simple fan). The switch mode power supplies should put out 12 volts, period.

If you understood none of that, just go back to my first sentence.

Ok we have been working on this for a few months..not continuously had to quit due to school tests. My son built an incubator, we are trying to install the thermostat..a bottom hot water heater one as shown on this site. Our lamp power cord does not have black/striped/white to determine pos/neg. they are both silver encased in clear plastic cording..any suggestions? Don't want to fry a breaker or my son get hurt.

Ok, if you have time to help my son I would be so grateful. He is trying to put the thermostat in. The directions we had looked at said to divided the wires on the light bulb..the lamp socket and run one wire to the thermostat. He has a new thermostat -lower hot water heater kind. We are doing this alone with no experience with electricity--kind of scary. It showed to cut your cord on the light bulb socket divide in half..strip your wires then connect one of them to the thermostat..to me seems like there should be 2 wires on each--two on the socket and two on the thermostat. If you can explain it would be great. He has the fan wired to a phone charger cord..works great. Thank you for any advice.
