Wisconsin "Cheeseheads"

You'll have to tell us your opinion of beaver.

Well now my list includes turtle, snake, bear, boar, bison, elk, goose, duck(yes I've never gotten a chance to try duck), quail, rabbit and moose, and goat. Basically I'll try just about any food.

I love the willingness to try out of the ordinary stuff. Most guys will eat anything but women on the other hand aren't so willing usually. If you like venison the you'll love moose when you get to try it. Hands down moose is my Absolute favorite meat. It's incredible.

I have not tried beaver burger, but I have had it smoked on the leg.  It was very tasty that way.  I did talk to a lady that used it for meatloaf and said that it was rather bland and needed lots of spices.

I may make it into meat balls.....I just wanna say I ate beaver balls more than anything

Popping in to say hello after a long, busy season. I hope everyone had a great summer. There are plenty of comments in this thread that I haven't had a chance to read so I hope all is well.

All three gardens were prolific - except for the tomatoes this year. Tomatoes had the blight in spite of my precautions and the larger varieties didn't fare so well. Had a few volunteer plants where last year's were planted and they did very well. This may be the last big garden year for us as the hub's back is getting pretty bad and he will need some more surgery soon.

The produce stand is still loaded, although the corn, lopes, beans, peas and peppers are now done or nearly so - beans and peas have been done for awhile now. The garlic was just so-so. Elephant garlic was the best but I pulled it a bit too early and much of it fell apart. Not bad for the first year.

Right now I have 38 chickens of various breeds and ages, including 7 that hatched just a few weeks ago. One of my older hens decided that she wanted to co-parent the little guys. I've never seen that happen before. She's clucking, herding, protecting, teaching, finding food, etc. It's like having a Granny around to help keep them on the right track. I had almost as many rabbits in the barn until this weekend when many of the little bunns came of age and were sold.

I'm looking for someone who would like to trade some laying hens (preferably around a year old or less) for nine Russian Orloffs that hatched this spring. They are an interesting breed and fairly rare - classified as "ornamental" butt some folks raise them for meat. They do lay eggs but they are closer to medium sized than large. I'd rather have layers with some good sized eggs than meaties. Let me know by PM if you have any interest in a trade. Will also consider selling them.

I'm happy to see Fall rolling into town now. Things will settle down quickly.

NO, not fall rolling in already!!
My tomatoes are just starting to ripen, I will pick my first one in two or three days...
Guess I got them planted a little late.

I love venison when cooked appropriately lol and thank you for the compliment. Hopefully someday I'll get to try some wonderful interesting things. I love the food shows where the hosts travel and try unusual food like bizarre foods with Andrew Zimmerman. Although I must be honest there are a few things I don't think I would ever try like balut duck eggs yuck!

Hello back at you, cs and hope your buckeye is doing good! It's been a really busy time around here for sure.

Fired up the grill tonight for a big venzun steak.....we sometimes save the whole muscle pieces for special occasions , like tonight when I also made scallops on the grill, with a pan of tomatoes and onions, and some fresh mashed potatoes from spuds dug today. Feels good to have the gardens winding down and the hunt about to begin.
